Ashley Huntington stands tall—both literally and figuratively—in the Australian craft beer scene, where he has been a pioneering presence for over 20 years.


Long before words like wild, sour, and spontaneous became part of the brewing lexicon in Australia, Ash was quietly crafting beers that expressed the unique Tasmanian terroir.

Through decades of brewing at Two Metre Tall, he has collected a wealth of stories, philosophies, and musings that reflect his singular approach to beer. We invite you to spend an evening with this charismatic brewer, as he shares his journey and pours a selection of his remarkable creation, perfectly paired with dishes from Fallow’s kitchen.
